The Kaluga hybrid caviar comes from two different species of sturgeon, the Kaluga Sturgeon (huso dauricus) and the amur sturgeon (acipenser schrenckii). It is known for having large pearls that have a nice firm texture. The pearls are a glossy gray color, with gold highlights that give it this olive green tint. Farm raised in China.
