Fresh Truffles
Summer Black Truffles Tuber Aestivum
Origins :
Abruzzo, Italy (April-August)
These are the most abundant of the year round black truffle, which peaks by June. They grow the largest in size, with a mild aroma and flavor profile. Since it is inexpensive and available in large quantities, culinary artists unapologetically incorporate large amounts of this particular truffle without overwhelming the senses. It takes center stage.

Winter Black Truffles (Perigords) Tuber Melanosporum
Origins :
Biobio, Chile (June)
These particular truffles are intense with flavor and smell. It is chocolatey, earthy, and has a distinct umami that stands alone in comparison to the year round selection of black truffles. Due to its pungency, less is more. Privately purveyed for Michelin Chefs, but available widely for all, this year as we've developed new partnerships with private sources. Typically, they are harvested two days prior to delivery. Always fresh, never frozen. Includes certificate of authenticity.

Kaluga Hybrid
Privately farmed from the Amur River (Russia/China border)
The Kaluga hybrid comes from two different sturgeon: the Kaluga Sturgeon (huso dauricus) and the Amur (Japanese) Sturgeon (acipenser schrenckii). It is known for its buttery, creamy, and subtle ocean salt flavor that bursts in your mouth. This caviar is known for having large pearls that have a nice firm texture. The pearls are a glossy gray color, with gold highlights that give it this olive green tint. Due to the current Russian embargo, products are shipped to China and then to the US for safe passage.

Russian Osetra
Privately farmed from Russia via China
Russian Osetra comes from the Osetra sturgeon (acipenser gueldenstaedii) . This caviar is known for its nutty and buttery flavor. The pearls are also large in size but the color is different. These pearls tend to have this deep amber color which makes the eggs slightly darker but more translucent. It still has a nice golden tint but with the Osetra sturgeon, the color of the eggs vary more.

Siberian Caviar

Yielded from Siberian Sturgeon (acipenser baeril, these medium-sized, light-to-dark-gray pearls have a tender consistency, practically melting in your mouth and relinquishing subtle, nutty flavors with a hint of the sea.
This caviar is denoted as "malossol," distinguishing it as a high-gradencaviar with no preservatives and only minimal use of salt.

Beluga Hybrid
Privately farmed from Bulgaria
Banned from the US for 20 years, Beluga Hybrid (Huso huso and Acipenser baeri) is a variety of caviar obtained from a hybrid of two sturgeon species, combining the rapid maturation of the sterlet and the rapid growth of the beluga. The taste of this caviar is tender, delicate, buttery, closer to the taste of beluga caviar. Beluga caviar is the most expensive type of caviar due to its scarcity and we are proud to be one of a handful of certified importers with direct access to it.
